I usually prepare the food of which i can find the calories easily hehe. If you had checked out my diet, i can list out the appx. calories of all. and i am south Indian too
to find your appx. calorie intake use the links over here daily calorie requirement - Google Search , will give you a rough idea. After that you have experiment and find it out.

I read that one has to reduce intake of 250 Calories and burn 250 calories a day. This means you burn 500 calories a day

@iml3g3nd, its upto you. It all depends on your lifestyle. I wouldn't advice rice items to those who have sedentary lifestyle.

Btw, can you provide links which explains from basic ?  Agnie, basic idea is to create a -ve calorie deficit at end of the day. Eating too less is not a very good idea. So its better to eat moderate and exercise well.
You should eat enough to have energy to do your days work, starving is totally out of question, you shouldn't let you metabolism drop down any time.
for eg. Your daily calorie requirement is 2500 calories. If you want to reduce 1 pound of body fat, then you need to create 500 calories defecit. If you want to cut down 2 pounds, then 1000 calories deficit will be needed. More than that is generally not advised. Idea is to reduce body fat and not muscles.
